of all the fish in the sea, I'm so glad you swam to me

After roughly 79 days, Hong Kong Disneyland has reopened for the 3rd time, and let us hope this time it stays that way! I was really happy to see this fishie again, especially knowing that I will be swimming with her through the Fall now after accepting my 7th HKDL contract.

3 in a row, and {weirdly after 8 years} the longest I have ever been in HK consecutively now

With Covid cases in the teens daily here in HK, a few other things have been able to open as well, including outdoor sports facilities, movie theaters, and restaurants may now stay open til 10pm, and up to four in a group. It is really nice feeling some of the restrictions loosen, as I am sure everyone has now somewhat experienced throughout this last year.

It really is so nice to be in the park again. I even took my mom and grandma on a virtual Facetime tour of the new castle!

Before the park announced it's reopening, we finished up celebrating Chinese New Year and Valentine's Day with a high tea at the Disney Explorers Lodge World of Color Restaurant.
chocolate coins for the new year

Not my favorite, but red bean should really not be a dessert flavor

scones! Deffo a favorite always (as long as you eat it jam first)

a basket of fried dough? yes please

This one was one of my favs

Mikes top choice

My cute little rainbow mocktail

this dish I would come back for again and again- sirloin steak burger

Kung Po Chicken Linguini - as close to American Chinese food you can get around here
can't have high tea without tea

We also spent some time walking around the Disney grounds at the Disneyland Hotel, and were greeted by Clarabelle Cow for new year!

Happy Valentines Day, babe <3
Because we weren't full enough, we also made cookies to celebrate as well-
Some other food adventures we have been on the last month or so were to the following-
Ca-Tu-Ya katsu - loved it, so good!

and a classic pineapple bun with a Bafang bubble tea and dumpling set

5 Guys recently opened in HK and I was so excited to have an American burger again. It tasted just like home.

Using an Eatigo coupon, we found ourselves at a really delicious hole in the wall spot called Falafel TLV -highly recommend!

And couldn't stay away long from Butter Cake Shop again, this time trying the realllly tart key lime pie

a Crepe from One More Pancake, my other favorite in Kwai Fong

Surprisingly this was actually our second crepe of the week because Natalie had made us some earlier in the week for UK's pancake day, and they were just as yummy-
Being back at work, I still have 3 days off a week, so we do have a little more time to go out and explore. One of my favorite places was hiking back to the hidden beach we found on Park Island.

We also have found ourselves in Central more often for some grocery runs and doctor visits, which led us to one of my favorite days walking Victoria Harbour, watching the jellyfish in the water and visiting the art sculptures.
jelly fish!

Tiny Art Sculpture Houses were my fav! See more about them HERE.

Although it seems this month was full of excitement of going back to work and joy after another contract renewal, it's time to get vulnerable for a moment. Things were kind of scary for awhile when Mike had to have a cyst removed from the center of his back. No one ever wants to see their loved one checked in to a hospital, but add on a global pandemic and being in a foreign country on top of that, and things can get intense pretty quickly. I am not going to go into all the major details, but long story short is the cyst is now removed, and Mike is quickly recovering and feeling stronger each day.
I was really glad I was able to be there to make sure everything went smoothly, even if that meant having to take the nose swab Covid test (which I haven't had to do yet), but yay negative result! Also, sidebar, we do have to get tested every 14 days to be at work right now, so I am feeling pretty safe about being open.
Another positive was this hospital was BEAUTIFUL! It was located right on top the peak, but the backside we don't often see.
He did have to stay overnight without me (which I HATED!), but it was all the more rewarding when I got to pick up that smiling face and take him home the next day.
I am so happy to have him feeling better, and am so grateful to everyone for checking in and the well wishing. A week after surgery he had his stitches removed, and doctor said everything looks great!

Hope everyone is continuing to stay healthy during this crazy time! We are missing everyone back home these day, and sending lots of hugs your way!
