How Do I like my eggs? Cadbury.


Hoppy Easter, friends! Easter usually means a time to rest from school or work to celebrate, but for the theme park world, that just means we get busier. HK Disneyland has been closed on Tuesdays and Thursdays since reopening, but this week, we experienced being open a full week for the first time in almost a year. I was very fortunate to be off this Easter, and so were Mike and Lindsey! We decided to take advantage of the day by biking from our home to Gold Coast.

We stopped for some Ebeneezers, Mister Softee ice cream, temples and beach views along the way.

and it's not Easter without a chocolate bunny, so we brought ours out for the day trip

The Easter bunny did find us here in HK as well, and brought a few other treats besides just chocolate bunnies. 

He also brought me a bubble egg waffle the night before-

The Easter bunny even made his rounds dropping off Fruity Pebble Rice Krispie treat eggs!  

Although it was a much more low key Easter, I am very lucky to get to celebrate with some family here, especially during this time we can't really travel home to see our families.

We have done a lot of fun things this month, mostly because contract 6 is coming to a close and some people will be leaving, and because the social distancing measures have allowed a lot of things to repoen. One of my favorite events this month was visiting the indoor trampoline park, Ryze with some awesome people! 

Another favorite activity was going to see Pirates of the Caribbean 2 at The Grounds. Drive in movies have always been a favorite date of Mike and I's and this is a very similar concept, staying in your safety pod instead of a car. We had a date night with some of our dear friends, and had the best time.
Although these chairs were kind of the worst...


We made the most of it though.
With a stunning view of the city surrounding us during both sunset and nighttime. 
We had food from nearby ordered in and delivered to our pod, which made for ultra convenience. 
Such a great evening!

We also booked out a movie theater to see Raya and the Last Dragon, and had the best time! I really loved the film, it was visually so beautiful and a great story. 

And now for everyones favorite portion of my blog, what Mike and I ate the last month! Hope you're not too hungry...

A classic Ichiran Ramen, aka the best ramen. But we didn't get to sit in our little booths they made us actually look at each other!

I often find the foods I want to try on Instagram, including this rainbow churro sundae from Twist & Buckle. Although it was totally beautiful to look at, I was really disappointed in how it tasted. 
Lindsey will be leaving us to go back home to the States in April (*cries*), so we have begun the "lasts", including last Tim Ho Wan dim sum trip. 
This one I was particularly excited about, a bloomin onion from Aussie Grill By Outback Steakhouse
A common restaurant in the UK is Nando's and there has never really been something that comes close to it until Jordan took us to Big Birdy, and it was SO delicious! 
We had a birthday lunch for our friend Ed at Sacrlett Cafe and Wine Bar, complete with Apple Crumble for first dessert and Cheesecake Factory cheesecake for second dessert!
One thing I am always craving in HK is Mexican food, and one of our favorite Mexican food spots is Coyote, complete with Cast 3 Margs!

With Lindsey leaving so soon, we wanted to have one last hurrah at Madam Fu for an elegant high tea with the girls. Everything was absolutely delicious, and I still think this is one of my favorite tea spots.

Cases in HK had a small spike recently, and we were a little worried things would begin closing again, but luckily, we have remained open. The vaccine is also now available, and Mike and I got our first shots of BioNTech already! 
I had a slight burning sensation in my arm when she administered the vaccine, followed by a terrible stomachache all day and a pretty sore arm for 2 days (even with my stupid looking walk down the street trying to prevent that). Mike felt absolutely fine other than a sore arm. 
The day after we got it, BioNTech vaccine then suspended distribution during an investigation about a packaging failure, so while we are still happy we got our vaccine, we are hoping this issue is resolved quickly to be able to get our 2nd dose on time, and others can continue the vaccination process to reopen the country. Word has it the vaccine should resume sometime this week.

Cases have been very low, under 10 daily, which has allowed Disney has to remained open and been pretty steadily busy, allowing me plenty of time to swim with my favorite fishy. 

With the park open, Mike usually comes to visit the park on Wednesdays, complete with all the snacks, castle photos, and character visits! 
They have a different princess cake every month, and right now it's Ariel!
